Crisp Marinated Salad with Cucumbers, Tomatoes & Onions

This refreshing marinated salad combines crisp cucumbers, juicy tomatoes, and sharp onions in a tangy, sweet dressing — perfect for a light side dish or summer meal.

Ingredients:

  • 2 cucumbers, peeled and thinly sliced
  • 4 ripe tomatoes, cut into wedges
  • 1 onion, thinly sliced into rings
  • ½ cup water
  • ¼ cup distilled white vinegar
  • ¼ cup vegetable oil
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions:

  1. In a small bowl, whisk together the water, vinegar, oil, sugar, salt, and black pepper until well blended to create the marinade.
  2. In a large bowl, add the sliced cucumbers, tomato wedges, and onion rings.
  3. Pour the dressing over the vegetables, making sure everything is evenly coated.
  4. Gently toss to combine.
  5. Cover the bowl and refrigerate for at least two hours (or overnight) to let the flavors fully develop and soak in.
