This refreshing marinated salad combines crisp cucumbers, juicy tomatoes, and sharp onions in a tangy, sweet dressing — perfect for a light side dish or summer meal.
Ingredients:
- 2 cucumbers, peeled and thinly sliced
- 4 ripe tomatoes, cut into wedges
- 1 onion, thinly sliced into rings
- ½ cup water
- ¼ cup distilled white vinegar
- ¼ cup vegetable oil
- 2 tablespoons sugar
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions:
- In a small bowl, whisk together the water, vinegar, oil, sugar, salt, and black pepper until well blended to create the marinade.
- In a large bowl, add the sliced cucumbers, tomato wedges, and onion rings.
- Pour the dressing over the vegetables, making sure everything is evenly coated.
- Gently toss to combine.
